Cho’s Chili

  • 1 tbs. olive oil
  • 1 lb. ground bison
  • 1 large red onion, chopped
  • 1 clove of elephant garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 2 roma tomatoes, diced
  • 1 anaheim chili, diced
  • 2 cups red kidney beans
  • 1 cup frozen corn
  • 1 ½ tsp. salt or to taste
  • 2 ½ tbs. NutraKik® Original
  • 1 tsp. chili powder
  • ½ tsp. cumin
  • 1 ½ tsp. cayenne pepper

In a large deep pot add oil and cook onions with garlic until soft. Add the meat and cook all the way through, breaking up the meat with a spatula. Combine the kidney beans, tomato, chili and corn. Cover and simmer for 30 minutes, stirring occasionally. Add NutraKik® Original and salt or to taste along with the spices and mix well. Spoon into bowls and top with a dollop of sour cream
