Cold Beet Soup

Ingredients
  • 3 Large beets
  • 4 ½ Cups of water
  • 2 Cups of cauliflower
  • 1 Medium red onion, finely chopped
  • ¼ Cup butter
  • 4 Tbs. NutraKik
  • 1 Lime
  • 1 Cup heavy whipping cream
  • Real Salt to taste
Garnish
  • 1 Cup sour cream
  • Fresh mint leaves
Preparation

Peel beets and cut into large cubes. Place beets and cauliflower into a large pot and fill with 4 cups of water. Cook until soft, turn off burner to allow vegetables to cool. Caramelize onions with butter in a small pan and mix with vegetables. Blend vegetables and place into an appropriate sized container. Mix NutraKik, lime juice and heavy whipping cream thoroughly. Place container in refrigerator to chill soup, serve and enjoy. If desired garnish with mint leaves on top of sour cream.
