Cold Beet Soup

Ingredients
  • 3 large beets
  • 4 cups of water
  • 2 cups of cauliflower florets
  • 1 medium red onion, finely chopped
  • ¼ cup butter/ghee
  • 4 tbsp. NutraKik® Original
  • 1 lime
  • 1 cup heavy whipping cream/ coconut creamer
  • salt to taste
Garnish
  • sour cream (optional)
  • Fresh mint leaves
Preparation

Peel beets and cut into large cubes. Place beets and cauliflower florets into a large pot and fill with 4 cups of water or until covered. Cook until soft, turn off burner to allow vegetables to cool. Meanwhile in a large pot, caramelize onions with butter and set aside.

Place vegetables in the blender and puree until smooth. Slowly add the beet water and blend to thin it out until your preferred consistency. Combine the beet mixture with the onions and bring to a simmer for 3-4 minutes, then remove from heat.

Mix NutraKik® Original, lime juice and cream and mix thoroughly. Place soup into and appropriate container and place in the refrigerator to chill, serve and enjoy. If desired garnish with mint leaves on top of sour cream.
