Creamy Curry Rockfish

  • 1 tbsp. vegetable oil
  • 2 tbsp. coconut oil
  • 4 tbsp. NutrKik® Curry
  • ½ red onion, chopped
  • ½ bulb of fennel, chopped
  • 1 lb. rockfish
  • 1 (13.5 oz) can of coconut milk
  • 1 cup of cherry tomatoes, sliced in half
  • ½ cup cilantro, chopped
  • Salt to taste

In a sauté pan, sauté the oinion and fennel with the oils. Once soft, add the NutraKik® Curry and sauté and mix for about 2 minutes. Place the filet on top of the veggies and add the can of coconut milk, cover and cook for 15 minutes or until the fish is done. Remove from heat and add the cherry tomatoes and cover for about 3 minutes to soften the tomatoes. Sprinkle with salt and cilantro for garnish, serve and enjoy!
