Mini Tortilla Española

Ingredients
  • ½ small red onion, thinly sliced
  • 1 small red potato thinly cut bite sizes pieces
  • 1 whole egg
  • 2 egg whites
  • Splash of milk
  • 1 tsp. NutraKik
  • ¼ tsp. salt
  • 1 tbsp. oil
Preparation

Preheat the oven to 350 F.In a small cast iron skillet sauté the onion and potato for about 5 minutes or until the potato is soft but not completely cooked. In a small bowl combine the egg, egg whites, NutraKik and salt. When the potato is ready, pour the egg mixture into the pan. Bake for 10-15 minutes or until the edges are slightly brown and the center is firm. Serve with our Chimichurri or your favorite sauce and enjoy!
