Salmon Cakes

Ingredients
  • 3 cans of 6 oz. wild salmon
  • 1 ½ tbsp. NutraKik® Original
  • ½ tsp. salt
  • 1 cup of panko or whole wheat bread crumbs divided
  • ¾ cup plain greek yogurt or sour cream
  • 2 tbsp. mustard
  • 1 tbsp. lemon
  • ½ tsp. dry dill or 1 tsp. fresh dill
  • 1 egg
  • 1 tbsp. vegetable oil
Preparation

Place all ingredients into a mixing bowl except for half of panko (bread crumbs) and mix well. Form mixture into 3-4” diameter patties. Bread patties with rest of panko (bread crumbs). Preheat ¼ inch of safflower oil in a skillet. Place patties in skillet and cook for 5-6 minutes or until golden brown.

Makes about 13 patties
