Sweet Potato Kale Frittata

  • 6 large eggs
  • ½ cup milk
  • ½ cup greek yogurt
  • 1 tsp. salt
  • 2 cups sweet potato, peeled & diced
  • 2 tbs. olive oil
  • 2 cups firmly packed kale/greens of choice
  • ½ small red onion
  • 3 oz. goat cheese
  • 2 tbs. NutraKik® Original

    Preheat oven to 350° F. Whisk together eggs, yogurt, milk salt and NutraKik® Original in a small bowl. In a 10” cast iron skillet (or non stick skillet) sauté sweet potato in 1 tbsp. of olive oil for about 8-10 minutes. Once golden, remove from pan and keep warm. In the same skillet add 1 tbsp. of oil, onions and greens and sauté until soft, about 3-4 minutes. Add sweet potatoes back, then a minute later add egg mixture. Stir to combine ingredients evenly and cook for 3 minutes. Sprinkle goat cheese on top and bake for 10-14 minutes or until set. Serve and enjoy!
