Huevos a la mexicana

4 Eggs
2 Roma tomatoes chopped
1 Jalapeño pepper seeded. finely chopped
¼ Cup red onion finely chopped
1 Tbs. Safflower oil
½ Tsp. NutraKik ®
1 Tbs. Finely cut cilantro

Heat oil in a pan over medium high heat. Add onion, jalapeño and tomatoe and cook stirring until soft, about 6 minutes. Whisk eggs in a bowl and add NutraKik. Add eggs into pan and stir. When almost cooked through add cilantro. Serve and enjoy.
