Vegan Pozole Verde

Ingredients 

  • 1 tbsp. olive oil
  • 1 large onion, diced
  • 1 large jalapeño, diced (leave a few seeds for heat if you like)
  • 3 – 4 garlic cloves, minced
  • 1 can (25 – 28 oz) hominy, drained and rinsed
  • 2 cans red kidney beans, drained and rinsed
  • 6 medium tomatillos, (about 1 lb.), husks removed, well rinsed and chopped
  • 4 cups water, + more as needed
  • 4 tbsp. NutraKik® Spicy
  • salt to taste

Garnish

  • sliced radish
  • shredded cabbage
  • red onion, diced
  • dried oregano
  • lime

Preparation 

In large pot, heat oil over medium, add onions and saute for 5 minutes. Add the garlic and jalapeño and cook 1 minute more, or until fragrant. Add the kidney beans, tomatillos, hominy, water and NutraKik® Spicy, bring to a boil, cover askew, reduce heat to low and simmer for 20 – 30 minutes. Season with salt to taste. Serve with your choice of garnish and enjoy!

Ingredientes 

  • 1 cucharada de aceite de oliva
  • 1 cebolla roja, picada
  • 1 jalapeño, picado
  • 3 – 4 dientes de ajo, picados
  • 1 lata (25 – 28 oz) de maiz, colado
  • 2 latas de frijol, colado
  • 6 tomatillos, limpios y cortados en cuadritos
  • 4 tazas de agua y un poco mas is es necesario
  • 4 cucharadas de  NutraKik® Spicy
  • sal al gusto

Para Servir

  • rábano
  • col
  • cebolla roja
  • oregano seco
  • limon

Instrucciones

En una olla grande, a fuego medio, saltea la cebolla por 5 minutos. Agrega el ajo y jalapeño, los frijoles, tomatillos, el maiz, agua y NutraKik® Spicy hasta que hiervan. Tapalo, reduce el fuego y deja hervir de 20 a 30 minutos. Sazona con sal. Sirve con los acompañantes que mas te gusten.
