Broccoli Cheddar Soup

Ingredients:

  • 3 tbsp. butter
  • 1 small red onion, chopped
  • 6 cups. packed bite sized broccoli florets
  • 4 cups water
  • 1 cup of milk or cream
  • 1 cup grated white cheddar cheese
  • 1/4 cup flour
  • 1/2 cup soft goat cheese
  • 4 - 5 tbsp. NutraKik Original
  • Salt to taste
Instructions:
In a large pot melt butter over medium heat and add the onion and cook until soft. Dust with flour and stir to coat well. Pour in the water and the broccoli and bring to a boil. Cook until tender for about 10-15 mins. With an immersion blender, blend until desired consistency. Add the milk/ cream and cheese and cook until melted. Add NutraKik and stir well. Season with salt, serve and enjoy!
