Coconut Curry Chicken

  • 1-2 tbsp. coconut oil
  • 2 chicken breasts
  • 1 red onion thinly sliced
  • 2 tbs of NutraKik® Curry
  • ½- ¾ can of coconut milk
  • ½ cup cherry tomatoes
  • cilantro to garnish
  • Salt


Preheat oven to 400 F. Using a large skillet, sauté chicken breast in oil until nicely brown on all sides, remove from pan and set aside. In the same pan sauté the onions with the remaining oil and cook until translucent. Add the cherry tomatoes and NutraKik® Curry to make a paste and sauté for about 5 mins. Add the coconut milk and stir the mixture until hot. Return chicken to the skillet and place in the oven, middle rack, and cook for exactly 20 minutes. Once chicken is cooked, retrieve it from the oven. Slice the breasts diagonally, arrange on a plate, spoon the sauce and the tomatoes over the chicken and decorate with cilantro leaves. May be served with white rice.
