Pomegranate & Persimmon Salad

Ingredients 

  • 1/4 cup orange juice
  • 2 - 3 tbsp. olive oil
  • 1/2 lime, juiced
  • 1 tbsp. NutraKik® Original
  • salt to taste
  • drizzle of balsamic glaze (optional)

Preparation

 

Add all ingredients to a jar with a tight fitting lid. Shake until the mixture is creamy (or emulsified). Store in the fridge for up to four days. 

In a large bowl add a bed of your choice of lettuce. For garnish add some pomegranate seeds, persimmon, and pepitas. Drizzle the dressing over the salad and toss. Serve and enjoy!
