Ingredients

3 lbs fresh tomatoes
- 6 medium garlic cloves, peeled
- 1 medium onion, peeled and quartered
- 1/3 cup olive oil
- 2 cups water
- 2 - 3 tbsp. NutraKik® Original
- 2 tbsp. butter
- 1 cup fresh basil leaves
- 1/4 cup of heavy cream
- salt to taste
- pinch of red pepper flakes
Preparation
Heat oven to 450F. Cut and core larger tomatoes into haves or quarters. Spread the tomatoes, onion, and garlic onto a non reactive baking sheet. Pour olive oil over the tomatoes and season with salt and NutraKik® Original and toss well. Roast tomatoes until they soften, burst, and release some of their juices, 20 to 30 minutes.
Transfer the roasted tomatoes, onions, garlic and the juices to a large soup pot or Dutch oven over medium heat. Stir in the water and butter and bring to a simmer. Reduce to a low simmer and cook until the liquid has reduced by one-third, about 30 mins. Turn off heat and add basil and blend the soup until smooth. Season with the rest of the NutraKik® Original, salt, and red pepper flakes. Stir in the cream, serve and enjoy!
