Red Lentil Yam Soup

  • 2 Cups red lentils
  • 1 Large red onion chopped
  • 1 Leak chopped
  • 1 Medium fennel bulb chopped
  • 1 Yam peeled and diced
  • 10 Cups of water
  • 6 Tbsp. NutraKik
  • 1 Tsp. Salt
  • 2 Tbs. Butter

Melt butter in a large pot then add red onion, leak, fennel, and sauté until they are translucent. Add water and bring to a boil. Add yams and lentils and boil for 5-6 minutes. Cover and cook for 40-45 minutes. Add NutraKik, salt and stir evenly. Serve and enjoy!
