Cauliflower Alfredo Sauce

Ingredients
  • 2 cups of water
  • 2 cups cauliflower florets
  • 2 ½ tbsp. NutraKik® Original
  • 2 tbsp. butter/ghee
  • 1/3 cup red onion, diced
  • 4 garlic cloves, minced
  • 8 ounces oh whole grain fettuccini pasta
  • ½ cup almond milk
  • ½ tbsp. lemon juice
  • salt to taste
  • Chili flakes for garnish
  • Chopped parsley for garnish
Preparation

In a stockpot, bring water to boil. Add your cauliflower florets to the pot, and cook until tender (around 8 minutes). Add 1 tbsp. of NutraKik® Original and let sit until ready to transfer to blender. Reserve 1/2 cup of the broth the cauliflower was cooked in.

Meanwhile, heat the butter/ghee over medium-low heat in a small skillet. Add red onion and minced garlic, sautéing for 3-4 minutes, making sure it does not burn. Remove from heat.

Bring a large pot of water to a boil, and cook your fettuccine according to package instructions.

Set up your blender or food processor. With a slotted spoon, remove the cooked cauliflower from the pot and transfer to the blender. Add the almond milk, reserved broth, lemon juice, sautéed vegetables, and 1 ½ tbs of NutraKik® Original to the blender. Blend well until smooth and creamy. Add salt and pepper to taste.

After draining, return the cooked pasta to the pot, add cauliflower sauce, and mix until all the pasta is coated.

Serve up among 4 plates or bowls (1 cup of cooked pasta in each), and garnish with fresh parsley and red pepper flakes if you wish.

      Vegan Cheese

      Ingredients
      • 2 cups raw cashews
      • ½ elepahnt garlic cloves, minced (1 Tbsp or 6 g)
      • 1 lemon, zested
      • 2 lemons, juiced
      • 3/4 cup water
      • 3 tbsp. NutraKik® Original
      • 1/2 tsp sea salt
      • 2 tbsp olive oil
      • FOR SERVING
      • 2 tsp. finely minced fresh dill
      Preparation

      Place cashews in a bowl and cover with cool water. Cover with plastic wrap and set in the refrigerator to soak for 12 hours. If you can't get to them right away, drain, place back in bowl, and cover with plastic wrap. They will keep refrigerated for 24-36 hours.

      Once soaked, drain cashews thoroughly and add to food processor. Add minced garlic, garlic powder, lemon zest, lemon juice, water, NutraKik® Original, salt and olive oil.Process until very creamy and smooth, scraping down sides as needed. Then taste and adjust seasonings as needed, adding more lemon zest for tartness, NutraKik® for cheesiness, garlic for zing, or salt for flavor + balance.

      Place a fine mesh strainer (or colander) over a large mixing bowl, and lay down two layers of cheesecloth (or a clean, fine, absorbent towel). Use a spatula to scoop all cheese over the cheesecloth, then gather the corners and twist the top gently to form the cheese into a "disc." Secure with a rubber band.

      Place in refrigerator to set for at least 6 hours, preferably 12, or until excess moisture has been wicked away, and it holds its form when released from the cheesecloth.

      To serve, unwrap from cheesecloth and gently invert onto a serving platter. Reform with hands or cheesecloth as needed, then coat with chopped herbs and a bit more lemon zest (optional). It is fragile, so handle gently.

      Enjoy chilled with crackers or vegetables. Cheese will hold its form for 1-2 hours out of the refrigerator, but best when chilled. Leftovers keep well covered in the refrigerator up to 5 days.

        Sweet Potato & Ginger Soup

        • 2 tbsp. butter/ghee
        • 1 small red onion, chopped
        • 2-3 garlic cloves, peeled and chopped
        • 3 cups water
        • 3 cups sweet potato, peeled & diced
        • ¼ cup ginger, peeled and julienned
        • 2 tsp. of sugar
        • ¾ tsp. Salt
        • 2 ½ tbsp. NutraKik® Original *
        Preparation

        In a large saucepan add butter/ghee, onion and garlic and cook until soft. Then add the water and bring to a boil. Add remaining ingredients (except for the NutraKik®) to the pot, cover and simmer for 30 minutes or until the sweet potatoes are soft. Remove half of the mixture and place into a blender and carefully puree until smooth. Return the mixture to the pot and add the NutraKik® Original and mix well. Serve and enjoy!

        Skin on Garlic Mashed Potatoes

        • 2 lbs. red potatoes, cubed
        • 1 lb. yams, peeled and cubed
        • 3 tbsp. unsalted butter/ghee
        • 1 ½ tbsp. NutrKik® Original
        • ¼ cup milk (non-dairy or dairy)
        • 1 – 2 garlic cloves, pressed
        • Salt to taste
        Preparation

        In a large deep pot place the potatoes and yams and cover with water. Bring the potatoes to a hard boil for about 15 or until tender yet firm and drain. With a potato masher, mash potatoes and yams to desired consistency. Add the butter/ghee, milk, garlic, and NutraKik® Original and mixed until smooth and creamy. Add salt to taste, serve and enjoy!

        *You can also add some 2 tbsp. of grated pecorino romano for a cheesy twist

        Curry Potatoes

        Ingredients
        • 5 red potatoes
        • ½ cup red onion, diced
        • 2 cloves of garlic
        • 1 tbsp. fresh ginger
        • 2 roma tomatoes, diced
        • 3 tbsp. NutraKik® Curry
        • 1 cup of water or coconut milk
        • ¼ cup cilantro, chopped
          Preparation

          Cut potatoes into small pieces and place them in a medium pot with water to boil for 5 minutes and then strain.

          While potatoes are cooking, sauté onion, garlic, and ginger in pan for 3-4 minutes or until soft. Add tomatoes and NutraKik® Curry and cook for an additional 3 minutes. Lastly add the potatoes and 1 cup of water or coconut milk, cover and simmer for about 10 minutes or until the potatoes are tender. Add half of the cilantro into the pot and mix well. Then upon serving sprinkle the rest of the cilantro as a garnish.

            Spinach Soup

            • 4 cups of water
            • 1 16oz. bag of frozen spinach
            • 4 tbsp. NutraKik® Original
            • salt to taste
            • 1 tbsp. heavy whipping cream or coconut creamer (optional)
            • 1 tbsp. olive oil (optional)
            Preparation

            In a medium pot bring water to a boil and cook spinach for about 10 minutes. Carefully ladle the soup into a blender and puree soup until smooth. (careful when handling hot liquids) Transfer back to pot. Add NutraKik® Original and salt and stir until well blended. You can serve with a splash of cream or drizzle of olive oil if desired.

            Red Lentil Yam Soup

            • 2 tbsp. butter/ghee
            • 1 large red onion chopped
            • 1 leek chopped
            • 1 medium fennel bulb chopped
            • 10 cups of water
            • 2 cups red lentils
            • 1 yam peeled and diced
            • 6 tbsp. NutraKik® Original *
            • 1 tsp. salt
            Preparation

            Melt butter/ghee in a large pot then add red onion, leak, fennel, and sauté until they are translucent. Add water and bring to a boil. Add yams and lentils and boil for 5-6 minutes. Cover and cook for 40-45 minutes on low. Add NutraKik® Original, salt and stir evenly. Serve and enjoy!

            Pico De Gallo

            • 1 small red onion, finely chopped
            • 6 roma tomatoes, chopped in cubes
            • 2 limes
            • 2 tbsp. olive oil
            • 2 tbsp. NutraKik® Original
            • ¼ cup cilantro, stemmed and chopped
            Preparation

            Chop onions and place in a bowl mixed with olive oil, lime and NutraKik® Original and let sit for 5 minutes. Meanwhile, chop the tomatoes then mix well in bowl. And finally mix in the cilantro. Serve and enjoy!

            Oven Roasted Broccoli

            Ingredients
            • 2 Broccoli heads (cut into florets)
            • ½ Clove of elephant garlic chopped
            • ¼ Cup Olive Oil
            • 1 Tbs. NutraKik
            Preparation

            Preheat oven to 400° F. In a mixing bowl toss oil, garlic and florets. Spread florets on a baking sheet and place in the oven, and cook for 15 minutes. Serve and enjoy!

            Spicy NutraKik® Popcorn

            • ½ cup corn kernels
            • ¼ cup melted coconut oil or butter
            • 1 tbsp. NutraKik® Spicy*
            • Salt to taste
            Preparation

            Pour kernels into hot air popper and prepare popcorn. Collect popcorn in a large mixing bowl and pour the melted coconut oil (butter) and mix evenly. Sprinkle NutraKik® Spicy and mix again to make sure that everything is coated evenly. Serve and enjoy!
