NutraKik® Green Beans

Ingredients
  • 1 lb of fresh green beans
  • 2 tbsp. olive oil
  • salt to taste
  • 2 tbsp. NutraKik® Original
  • 2 tbsp. butter/ ghee
  • 1/3 cup unsalted dry toasted sliced almonds
Preparation

Preheat the oven to 400 F. In a large mixing bowl add olive oil, salt and NutraKik® Original and set aside. Rinse green beans thoroughly, trim ends; break in half and pat dry. Add to bowl and toss with olive oil mixture.

Spread green beans on a baking sheet and roast on the center rack of the oven for 20-25 minutes or until tender and slightly golden.

Heat butter/ghee in a skillet, add almonds and toss for a minute. Add the almonds to the green beans and toss until combined. Place in a serving dish and enjoy!

    Garlic and Parmesan Brussels Sprouts

    Ingredients
    • 3 lb of Brussels sprouts
    • ¼ cup of unsalted butter
    • ¼ cup of olive oil
    • 12 large garlic cloves, minced
    • 1 ½ - 2 cups of water
    • 2 tbsp of NutraKik
    • Salt to taste
    • 1 ½ cup freshly grated Parmesan cheese (optional)
    Preparation

    Trim the ends of the Brussels sprouts and cut the sprouts in half lengthwise. Heat the butter and oil in 1 or 2 sauté pans large enough to hold all the Brussels sprouts in one layer. Add the garlic and cook over low heat to remove the bite, about 2 minutes. Add the brussels sprouts and water and ½ tbps of NutraKik to a depth of 1 ½ inches and cover the pan. Simmer until tender-crisp, stirring occasionally, about 5-8 minutes. Once done place in a bowl, season with salt, 1 ½ tbps of NutraKik and top with the cheese. Serve at once and enjoy.

    Asparagus Soup

    Ingredients
    • one 12 oz. bag of frozen asparagus
    • 3 cups of water
    • 3 tbsp. NutraKik® Original
    • 1 tbsp. heavy whipping cream or coconut creamer (optional)
    • 1 tbsp. olive oil (optional)
     Preparation

    Thaw asparagus for about 5 minutes. Cut one inch from the tip of the spear and set aside for the garnish. Then take the roots and cut into ½ inch pieces. In a medium pot bring water to a boil, add root pieces and cook for about 15 minutes then let cool slightly. Carefully puree soup in batches in a blender until smooth. (use caution when blending hot liquids). Transfer back into the pot and add NutraKik® Original and the spear tips. Stir until well mixed and serve with cream or olive oil if desired.

    Creamy Vegan Linguine with Mushrooms

    Ingredients
    • 1 lb. linguine or fettuccine
    • 6 tbsp. olive oil
    • 12 oz. mixed mushrooms, thinly sliced
    • 3 cloves garlic, finely chopped
    • 1 small red onion, chopped
    • 1/4 cup nutritional yeast
    • 2 tbsp. NutraKik® Original
    • 2 green onions, thinly sliced on an angle
    Preparation

    Cook linguine as label directs, reserving ¾ cups pasta water before draining. Return drained linguine to pot.

    Meanwhile, in 12" skillet, heat oil on medium-high. Add mushrooms, onion and garlic; cook 5 minutes or until mushrooms are browned and tender. Transfer to pot with cooked and drained linguine along with nutritional yeast, reserved cooking water, 1/2 teaspoon salt , 2 tbsp. NutraKik® Original and 3/4 teaspoon coarsely ground pepper. Toss until well combined. Garnish with green onions, serve and enjoy!

    Chimichurri Potatoes

    Ingredients
    • 1 lb. red potatoes, cubed
    • 2 tbsp. Kawi Foods Chimichurri, prepared*
    • Salt to taste
    Preparation

     Cut potatoes in bite sized pieces and boil them until firm but tender. Once drained, in a large mixing bowl add the potatoes and Kawi Foods Chimichurri sauce. For best flavor, let the potatoes marinade for a bout 2 hours serve and enjoy!

    Butternut Squash Soup

    Ingredients
    • 1 (2 to 3 lb) butternut squash, peeled and seeded
    • 2 tbsp. unsalted butter or ghee
    • 1 medium red onion, chopped
    • 1 small fennel bulb, chopped
    • 4 cups of water
    • 5 tbsp. NutraKik® Original
    • 1 cup coconut creamer
    • Salt to taste
    Preparation

     

    Cut squash into 1” chunks. In large pot melt butter/ghee then add onion & fennel and cook until translucent, about 8 minutes. Add squash and then cover with water, about 4 cups. Bring to a simmer and cook until squash is tender, about 15-20 minutes. Remove squash chunks with slotted spoon and place in a blender and carefully puree or use an emersion blender to puree. Return blended squash to pot. Stir in the coconut creamer and season with NutraKik® Original and salt. Serve and enjoy!

    Tzatziki

    Crispy Panko Chicken Breasts

    Ingredients
    • 6 chicken breasts
    • 1 cup panko breadcrumbs
    • 3 tbsp. of NutraKik® Original
    • 1 tbsp. vegetable oil
    Preparation

    Place chicken breasts into a container and pour oil over chicken. Sprinkle NutraKik® Original over chicken and let sit for 5 minutes. Bread breasts with panko breadcrumbs. Heat skillet over medium high heat and place chicken in skillet. Flip chicken every 2 or 3 minutes and cook until brown, crispy, or fully cooked. Serve with a side of our Kawi Foods Ranch and enjoy!

    Crunchy Panko Shrimp

    • 1 lb. frozen shrimp
    • 2 tbs. vegetable oil
    • 1 tbsp. NutraKik® Original
    • ½ cup panko breadcrumbs
    Preparation

    Thaw shrimp and once thawed, dry shrimp with paper towel to preserve flavor. Place shrimp into a container and pour oil over shrimp. Sprinkle NutraKik® Original over shrimp and let sit for 5 minutes and then bread with panko breadcrumbs. Bring skillet to medium high heat and place shrimp in skillet. Flip shrimp every 2 or 3 minutes and cook until crispy, or fully cooked. Serve and enjoy!

    Potato Corn Chowder

    Ingredients
    • 2 tbsp. butter/ghee
    • 1 tbs of extra virgin olive oil
    • 1 red onion, diced
    • 2 cloves of garlic, minced
    • ¼ cup all purpose flower
    • 6 sprigs of fresh thyme, leaves only
    • 4 cups water
    • 4 tbsp. NutraKik® Original
    • 1 cup heavy cream/ coconut creamer
    • 5 cups red potatoes, diced
    • 3 cups frozen organic corn, slightly thawed (or 6 corn on the cob)
    • Salt to taste
    Preparation

    In a large pot heat the butter/ghee and olive oil over medium heat and add the onion, garlic and thyme. Cover and cook vegetables until soft, around 8-10 minutes. Dust the vegetables with flower and stir to coat well. Pour the water into the pot, cover again and bring to a boil. Add the cream and the potatoes, cover again and bring to boil and boil hard for about 7 minutes or until the potatoes are soft. Add the corn as well as the NutraKik® Original and stir well. Season with salt, serve and enjoy!

    * Drizzle with a little olive oil once served (optional)
